Lots of silly questions! Bear with me ...

Okay having decided on the name for my business, I want to register as a a sole trader and purchase a domain name.

I am working on a website on Wix. I have chosen my domain name and I know it's available. Do I need to purchase it through Wix or is it okay to purchase through another provider (seems to be a bit cheaper).

Re registering my company name, is this purely a case of registering for self assessment or do I need to actually register the name in a separate process?

I can't answer your website question but can help with your company ones (I am a chartered accountant).

If you are intending as operating as a sole trader you will not have a limited company so no need to to register with anyone other than with HMRC who you need to notify that you are self-employed.

I think 123reg are pretty cheap for registering domain names, so you can buy through them and then point it to wix's servers (you do that on 123reg's site)
