Wizard's First Rule, by Terry Goodkind.
Really good, it's quite thick but VERY easy reading for a fantasy novel, it's very simply written too (perhaps a little too simple.. hmm) but it is really enjoyable.
It's the first book in a long series, but I'd definately recommend it.
