Things/dressings that make a salad spectacular

I really need to get back to Loving the Lettuce. And I don't mean inside a foot-long baguette.
I find low fat dressings and mayo rather insipid, and I am not a lover of plain salad. But I'm a grown up and realise I cannot always have exactly what I want. I need to eat more HEALTHY salads.
My new exercise machine/torture device has been delivered this morning and I shall be doing a healthy new me shop later.
Your suggestions for jazzing up salads but keeping them healthy?

I like pizza express house dressing, they do it in a low fat version you can buy in a supermarket.

I also make a nice quinoa salad with a drizzle of lemon juice and very small drizzle of olive oil, then lots of pepper, cucumber, pomegranate seeds, mint, can add some chicken.

My usual go to is lettuce, tomatoes, cucumber, spring onions, with sliced chicken and a boiled egg. Tesco finest balsamic dressing is delicious and only 50cals a tablespoon which goes a long way. Also look up the fast 800 tuna and edamame bean salad, it's so good and filling only 400 cals.

Chopped red pepper, chopped orange and drizzle of chilli sauce.

Cold meats, or prawns or tuna.

Cheeeeeeese.

Fruit such as sliced apples, pears, and strawberries can really lift a salad.

Peas, chopped mint and pancetta.

I'm not really a dressing fan, just usually add a squirt of lemon or lime juice and a bit of salt and pepper.

This salad is amazing. May not win many dieting awards though.

Toasted pine nuts

I'm vegan now but I used to love apple and / or grapes in a cold chicken salad.

I buy the sweet chilli beetroot and find I don't seen a dressing if I have that in there.

Another vote for the Pizza Express dressing - the vegan one is 40 cals a tablespoon and goes a long way.

Apple balsamic dressing is good too.

I can't be faffed grating carrot so usually do that on a mandolin so it's nice and thin, but quick.

Sprinkle some asafoetida over your salad and then lemon juice and salt. It's truly amazing. I have my late dad to thank for this and now all my friends do the same thing!

Anthilda Tue 30-Jun-20 23:49:27

Add some corriander.

Kimchi!
Easy to make from your favourite vegetables, so delicious and an amazing super-food. Add a small amount to the dullest salad and you have yourself a culinary delight.

Pine nuts, onion seeds, flaked almonds.
Chopped walnuts or walnut oil.
Carottes rapées
Tahini dressing
Use yoghurt as a dressing
Shaved Parmesan
Add fruit, raisins, apple, grapes, segments of grapefruit etc.
Pomegranate molasses

Sauerkraut, mayo and seeds (I buy a toasted seed mix)

Cook a big pot of roasted veg like antipasti and then add to salad with some feta

Variety of veg and take the time to cut it all into the same size pieces, dress by shaking it all up in a box so everything is coated properly.

Red cabbage slaw/Waldorf slaw is delicious; red cabbage, red onion, raisins, walnuts, red grapes. Mix with a dressing of mayo, or mix full fat yog and mustard.

I think for me, the difference is that salad is my main event, not just a garnish. It needs a bit of love. I love a good salad!

I love Sainsburys Raspberry Vinegerate dressing, really perks up even the most boring salad.

I tend to make a lemon and honey dressing to go over a standard salad (lettuce, cucumber, toms and onion)

Tblspn honey
Tblspn lemon juice
Tspn olive oil

Real easy and it's got a nice balance of that sweet and sour bite

I also add peppers, grapes, beetroot, avocado or watercress of I have any.

The Tesco calorie French dressing is nice.

I also use rocket and watercress as well as more standard leaves. And I add chicken cooked i salt and pepper seasoning
