Inspire me with your delicious lunch ideas - that don't include bread / other processed carbs

Go on, you know you want to.

I'm a bit fed up of soup and omlettes but salads aren't cutting it in this weather.

Please inspire me with your delicious lunch suggestions

Lettuce as bread with whatever you want in the middle. DH often uses big lettuce leaves and stuffs them with some kind of meat and salad.

Or you could have baked potatoes. Or roasted vegetables with garlic and rosemary?

Curry, rice, noodles....

Are you eating at home or taking to work?
I take to work

  • leftovers plus extra veges or salad (even if just a carrot, spinach leafs or celery sticks or tinned corn - whatever I have)

-a huge plate salad with tinned tuna or ham or boiled egg or feta
-2 slices grainy bread plus cashew or almond butter - Toast bread, add spread plus mashed banana ( bloody delicious)
  • at least 2 pieces fruit daily
  • have big packet unsalted , unroasted nuts in desk draw

As you can see big on filling myself up with fibre in form veges and protein.

(Leftover) pearl barley risotto. With roasted squash, veg and chicken.

Or a similar combination in a stew.

I buy tins of already cooked lentils or three bean etc and then add tuna or a boiled egg, and tomato cucumber olive etc.

This is boring but I now take this to work everyday as part of a "5 portions of veg per day challenge".

  • 2 babybel (or 1 babybel plus 1 hard boiled egg, or 2 hard boiled eggs). Don't take the eggs unless you have a fridge at work or you'll be socially shunned. Helps to refrigerate overnight after cooking as well.
  • A massive amount of cut up carrots, celery, cucumber, peppers, sugar snap peas.
  • small pot of humous (I guess about 50g).
  • 2 pieces hard fruit or a punnet of berries


I have one of those stainless steel multi level lunchboxes to keep it all in.

This can all be prepped the night before so easy to grab and go. It has improved my diet a lot as I always have veg sticks left over to munch in the afternoon rather than snacking on biscuits and crap.

Avocado, Sun dried tomatoes and mozzarella with balsamic vinegar. Or even just avocado with balsamic on its own.

Thank you for the ideas although quite a few are salady which I’m struggling with enjoying in the winter.

I work at home so I can cook / heat up

You can bake sweet potato in the microwave, which is mi e with hummus (and lots of butter, but still nice without).

Soup. Green soup, red soup, brown soup, orange soup.

Last night’s leftovers.

My make chickpea curry and dish up a small portion for lunch the next day. Pasta bake and do the same. Ham & broccoli gratin this week so again will do the same

I sometimes make a frittata stuffed with peppers and chorizo the night before then take it to work, by lunchtime its room temperature so tastes lovely. I also take in hard boiled eggs and slices of meats/hams.

Is there a microwave you can use? In which case soups or sausages reheated?
