Pllleeease help 1200 cal a day veggie diet?

I've lost a lot of weight before but have been slowly putting it back on the last year or two and have a fair bit to lose now. The problem is I've gone vegetarian and am really really struggling with food ideas? Every single weekly meal plan I've found on the internet is a huge faff and so I end up just fucking off the diet and filling up on cereal or cheese toasties :(

I don't enjoy cooking that much but I really don't mind eating the same thing every day either. Is there anyone like me who can maybe throw two or three days worth of meal plans my way?

I'm doing 5:2 and fasting 2 days a week.

I've lost 9lb in 3 weeks.

I have been eating ready meals in the evening as I can't be bothered faffing around with calories and cooking!!

I'd also make lots of veg curries and swop the oil for fry light. I do some amazing currys that could easily be veggie and very healthy

Ready meals didn't even cross my mind - how bizarre is that?

Calorie counting is so tedious when cooking curries and things like that - wishing I could go back to my 20's and sweat it all out on fridays and saturday

Greek yoghurt or Eggs for breakfast.

Lentil soup, or salad with eggs or nuts or baked tofu for lunch.

Dinners are curries, bean chilli, shepherds pie with quorn mince, quorn fillets or baked tofu with sweet potatoes fries and veg.

You need to keep your protein levels high to stave off hunger

Do you not cook ?

Try just not eating bread / cheese for a week and thinking if more imaginative stuff instead. I think cheese especially is the calorie pitfall of a veggie diet for lots of people.

Eggs- good filing and calorie cheap really. Hard boil half a dozen and stick in the fridge.
Fish sticks for snacking.
Bags of salad / carrot / pepper/ cucumber sticks.
Soups - lots of lentils / chickpeas
Curry
Chili.
Porridge for breakfast.

I am veggie and often stick to 1200 cal.

Typical day:
B: poached egg with sweet potato sand avocado - 300c
L: bowl of veggies (broc tom cuc spin) with humus - 300c
D: lentils and roast veg w rice - 500c
Snacks - couple of rice cakes w marmite or some nuts or a Clementine.

Thanks for all the suggestions there ladies.

I do cook but for my husband who is a big South African man. I stay at home and have no kids so while he has said he doesn't mind cooking his own meat I would feel awful that he goes off to work all day and doesn't come back to a really nice meal. Dinners aren't really the problem to be honest as I just eat the sides to the meal which is veggies usually - Its more breakfast and lunch. I usually eat a cheese and pineapple wrap for both meals (I know I know) Very fatty, sugary and carby :(

Dead easy then 😄

Yoghurt and berries for breakfast and salad / chopped veggies with hummus/ varous dips for lunch.

Minimum effort and very healthy. Just make sure you buy what you want to eat and stop buying wraps and you'll change your diet easily.

( eg when I'm trying to eat less bread I buy white toastie loaves that the kids love and I detest!)!

I am veggie, typically stick to 800-1000 cals a day when on a diet.

typical diet day
B - nothing or 2 boiled eggs 140c
L - Asian miso broth with veggies 200c
D - Stuffed peppers with pesto feta and cannellini beans, served with salad 450ish

Snacks - babybel/cheese strings 70 each

860 if I only have one snack, going lower carb means I don't feel hungry much, I loosely follow the blood sugar diet have lost almost 5st in 8 months.
