Lower carb - veggie chips?

Good thing/bad thing? I've seen recipes for courgette chips, kale chips etc. Are these a good alternative to potato chips? Any more suggestions?

I've never done courgette chips or kale chips but we regularly have celeriac chips. They taste similar to sweet potato, a bit of an acquired taste at first because they're quite sweet but they're really low in carb and go well with steak Smile

Brilliant. I love celeriac. I tried courgette chips tonight in a bit of a rush. Lots of recipes have flour coating which I wanted to avoid so I found one with oil and Parmesan. They stuck to the oven tray and were a bit of a soggy mess. Tasted nice but not really a chip quality to the texture! Try again though.

I only ever make celeriac chips now. Teaspoon of curry powder, S&p, olive oil, hot oven. Yum!

I LOVE celeriac, parsnip chips are nice too. You can roll them in spiced ground almonds instead of flour that works well.

I make a lovely shepherds pie topping with mashed, steamed celeriac and carrots, olive oil, spices etc. instead of potato.

Another low carb alternative is aubergine crisps. Cut straight across in thin slices so they look like potato crisps. No salting before frying (in butter) as they need to be firm. When they catch, they'll go to burnt quite fast so keep turning. Very good with mayo.

Also a huge celeriac chip fan.

Yes Globe When I make moussaka I always grill or bake the sliced aubergines and before baking just brush them with garlicky, olive oil. It saves them soaking up too much butter or oil when they fry.

Just got me wondering. Those posh packets of veggie crisps you see in the supermarket. Too good (and convenient) to be true?

The ones in supermarkets are deep fried though aren't they Tobee ? So not the 'good ' fats like olive oil! I do like them though!

I've been looking and I can't see the bad fats for carbs. On diet doctor I can only see olive oil and butter as good so which are bad, please?

Well when olive oil and some other oils reach a certain temperature (like in deep frying) they change their chemical make up and become unhealthy. Maybe that affects our digestion I'm not sure Grin.

I always fry food gently. I sometimes add a tablespoon of water to keep the temp lower.

It's difficult to say which fats are bad for everyone because we all have different reactions to them (sorry I just reread your post !) .

Like saturated (animal fats) used to be called terrible for us. But some people are fine with them, in moderation of course! I'm not good with them though.. DD1 HATES sunflower oil , she can taste it in anything.

The worst fats are the processed hydrogenated ones, they used to be in everything. Coconut oil is alright for some people but it's VERY high in calories, like all coconut products , which seem to be in everything now!!

I stick to olive oil, I love it and use it on toast as if it was butter which gives me Hay fever like symptoms!

Help! Tips please. My courgette tips remain soggy. Maybe I should be using rounds and frying in a pan??
