I am exercising 3 times a week

What do I need to do to my diet?

Do the Shred exercise DVD. I think part 1 is free on YouTube. You'll definitely see a difference in 2 weeks if you do it 5x a week.

Then stick to a diet that's easy for you. Whatever it is - lo carbs, calorie counting, 5.2, - as long as it fits into your life and is only an adjustment to how you prefer to eat.
