Encouraging chewing

Hi, my 9 month old DS tends to suck on and then swallow his food without much chewing.
Is this normal?
We are going down the AK feeding route, i.e. now on mashed food. Because his food is getting quite lumpy and dry now, he is getting food caught in his throat quite often and got really upset about this last time(despite me looking on smiling so he doesn't think it's a big deal).
Any advice or suggestions to encourage chewing (I have tried making chewing motions myself in front of him, which he finds hilarious ... mind you, I'd find it quite funny too!).

maybe try more finger foods to hold and chew rather than mashed up stuff?

Yeah, he has finger foods as well with every meal. That is what he keeps trying to swallow whole and getting into problems. He loves toast and biscuits. He just seems to put too much in his mouth at once. I think I need to monitor how much is in front of him maybe.
