suggestions for melt-in-the-mouth food?

I'm beginning to think that my very reluctant to eat 8 month old does best with things that have a melt in the mouth texture.

The things he eats most of are:
biscuits
mini wheats (like mini Shredded Wheat but I worry they are too high fibre for him)
ripe pear
avocado

Any suggestions for other food with this sort of texture? Ideally things he can feed himself but things we can 'post' in with our fingers are okay as well (spoons are out as he hates them). I thought of mango and papaya. Don't want to give him Cheerios because they're Nestle (and also full of gunk) Anything else?

(I'm not giving up on the other stuff - he enjoys feeding himself roasted root vegetable chunks, broccoli florets, lumps of cheese etc, but only eats 2 or 3 mouthfuls. I just want to add to my repertoire of things he can eat a larger quantity of)

Rice cakes are great for melting type foods or apples if you leave them to go slightly overripe iyswim...

Can I ask if you are worried about his intake...how much milk is he getting? (or how many bfs if he is bf?) Babies dont need that much in the way of solids at first as the milk will provide all their nutrients & calories. 2-3 mouthfuls sounds about right to me for just starting out on solids.

cooked pieces of sweet potato, oatcakes dipped in warm milk, bananas, overcooked cauliflower florets, slices of gently cooked apple...will keep thinking for you!

pasta, things like fussili or something?

stewed apple or plums, nectarines

coisants with melted cheese

Terramum - I'm not really worried, although he is dropping centiles a bit. Am trying to address this with more bf though (7 or 8 in 24 hrs at mo.). it's more that I'm going back to work 3 days a week in 6 weeks so I'm trying to get him to take food in any way but bfing. He'll only take an ounce or two of milk from a Doidy cup at a time, so I'm just trying to increase the ways he can take nutrition by getting him onto a bit more solids. But persevering with the Doidy cup is the main way to go, I know.

Pasta doesn't really have the 'melt in mouth' texture that he seems to like although he has fun sucking it. Stewed fruit I can't think how to feed him - he can't pick it up and I can't post it in with my fingers (he doesn't like spoons). Oatcakes is a good idea - I'd stopped doing them cos I was worried they were too fibrous but I think that's probably being too cautious.

Any more suggestions welcome!

omelette? I make ds's with various veg stired in (spinach is a favourite) and he seems to find it very easy to eat though he doesn't have any teeth yet.
