would you give an 8 month old tuna mayo sandwich?

I'm confused about whether the salt content would be too high for her. I've liked up recommended amounts if salt etc and added up what I think each part will contain but its hard to judge as she'll have such a small amount....

Not every day but once a week or so, yes. Would try for a low salt dinner to balance it out (so no bread/ham/processed stuff).

If the mayo is homemade/artisan, you may want to check if the eggs are pasteurized, since raw eggs are not recommended for babies.

I have given my 9 month old ds tuna a few times. I use the tuna in spring water and mix with cream cheese instead of mayo as the only mayo we have is low fat and he loves cream cheese anyway. I also add some avocado with it.
