Proper Puddings

I've recently got into doing a proper Sunday roast complete with what DD calls Proper Pudding (rather than fruit or yoghurt). We've had a lot of crumble type things, and the most amazing chocolate fudge sponge but I'm not doing that too often or all our teeth will dissolve, it was extremely sugary. Running out of ideas - hit me with your vegan pudding inspiration.

This is nice with oatly milk and pure margarine.

We have soya custard with it but not sure if that is vegan. If you make the cake read the comments first.

Crumble or cobbler work well, and you can make vegan custard if you dont want ice cream with it

Aquafaba meringues with fruit and whipped coconut cream is a favourite here.

Rice pudding and semolina if we want real school dinner type pud!

Strudel or pie also yum and easy.

Sadly Queef after a few dismal attempts I have concluded that there's no such thing as achievable vegan Yorkshires Sad

I will just have to console myself with sticky toffee instead!

That sticky toffee pudding was flippin amazing and easy to do. That's on the list.

The family has voted for the Jamie Oliver bread and butter pud next.

Any of the Dreena Burton ones are good, her recipes just seem to work and they're very forgiving. Although I have also resorted to the just-add-water nut roast from Holland & Barratt which is not bad, and this Sunday I'm roasting giant chestnut-stuffed mushrooms.

I'm bumping this as have volunteered for dessert at a gathering - I'm not vegan but friend is. Am cooking for 10 and like the idea of meringue!! Vegan friend is not really into heavy puds though so although the toffee pudding / bread and butter sound great they're not quite right.

Lauras Though if you don't want the puffy ones (yorkshires) You could do it using baking powder as the lightener. And linseed 'eggs' which work well to keep everything together (you do have to have a powerful blender though).

My mil used to make her totally NOT vegan yorkshires like cakes anyway!!! Grin

Fusion Does your vegan friend like sugar? There's loads in aquafaba meringue, as in normal meringues !! I'm not a sugar freak so can't bring myself to make them. !

You could try making light brownies for her. Much less sugary.
