I’ve got a really busy week coming up. What are some super quick vegan meals I can knock up that isn’t toast...

Quick prep but 35mins in oven: chuck tinned chickpeas, halved tomatoes, oil, lemon and cumin into baking dish. Stir. Ram in oven for 35 mins at 180, stirring after 20 mins. Stir some fresh coriander through at end. Lush hot or cold and a great go to party salad.

When I am at work I cook a load of veggies and chuck a tin of butter beans in ill have it with a sliced banana. I do spinach, cherry tomatoes, sugar snap peas and peppers with some vegan miso paste or some soy sauce. I add water to broil it until veg tender add the beans its ready when the water is almost gone its done.

I love my rice cooker and slow cooker for this!
I use them both very regularly.

I cook quinoa in my rice cooker and eat with marinated tofu

Green lentils made in rice cooker then stir fried with soy sauce, rice vinegar, walnuts, almonds, carrots, and spinach

Pearl barley made in rice cooker stir fried as above but with spinach, leeks, corgette and five spice.

Slow cooker just throw some frozen veg in with some stock and some spices and jobs a good ‘n you have a curry/chilli/ whatever you fancy.

I make a delicious lentil, onion, mushroom and celery bolognese sauce with tinned toms and passata, garlic granules, veg oxo cube, onion granules, chilli, black pepper, I make a big batch and freeze it in portions then just cook some wholewheat linguine it so quick and easy.

My really lazy go to is Singapore Noodles which microwave in 2 minutes with a stir fry pack like this

I make up a stir fry sauce in a jar and keep the spare in the fridge so the next meal is faster.

My staple is roast cauliflower. I can then have in a curry or just on its own. I also always have a jar of salad dressing (Dijon mustard, mixed with oil, and then add raspberry vinegar and salt). It's great in a carrot and garlic (this is better on the second day) or with tomatoes and pepper, and also poured over avocado. Or in a mixed green salad. It's very versatile!

Fry garlic, onion and curry powder.
Add tin of beans / chickpeas / lentils and coat.
Add tinned tomatoes and slug of coconut cream. Couple of blocks of frozen spinach when I'm feeling fancy.
Enjoy with microwave rice.
Mmmmm mm

Tinned green lentils in spag Bol, tinned green lentil, potato & chickpea curry (use jar curry paste & add tinned coconut milk. Chilli using lentils, those are some of my faves 😀

Put pasta on to boil.

Add olive oil to pan, fry garlic and diced onion, add tin of chopped tomatoes, season with salt pepper, vegan Worcestershire sauce, nutritional yeast for B12, balsamic vinegar and some red wine with oregano.

Bring to boil and then simmer for ten minutes.

Add the pasta and stir through for another couple of minutes and you're done. We have it at least once a week and it takes less than 15 minutes.

Beans and greens

Fry a chopped onion and a couple of cloves of garlic, finely minced, in a splash of olive oil until soft. Add a drained can of cannelini beans and cook for 5 minutes or so until hot. Add about half a bag of spinach and a tablespoon of lemon juice. Season well and cook gently until spinach has wilted. Eat with rustic bread and vegan butter.

This is my favourite quick meal of all timeSmile

Roast veg - aubergine, courgette, pepper, red onion for 15-20 mins. Add tomatoes and mushrooms, and continue roasting for another 12 mins while you boil some pasta. Mix, and spinkle some pine nuts on top for protein.

Lentil chilli,
Veg curry
Salady things with lentils, roast squash and vegan feta.
Vegan pizza ( you can make a batch of pizza dough and freeze in portions ). DD1 is happy with roast veg and no cheese on hers, but you could use vegan cheese.

My DDs seem happy to live on some version of pasta with fridge stuff/ raw veg. They often seem to toss the pasta in oil or vegan marge then add e.g. peppers, sweet corn, avocado, spinach, cherry tomatoes, pine nuts or whatever else we have in. DD1 is vegan and DD2 veggie, they do this when DH and I fancy meat ( only once a week or so, im trying to cut down ).

Lessstressed I love your recipe because I can't stand tomatoes, I make a fab cannellini bean dip , because I can't stand chickpeas or houmous either!

Hi all,
I'm in my 4th week of eating Vegan. Would love to know what are your food cupboard staples. So far I've bought miso paste, tahini and nutritional yeast flakes as they seem to be frequently listed ingredients. I'm also trying to be wheat free so I'm using lentil or spelt pasta, rye or oat bread. I've tried some of the tofu foods but not really keen so I think I'll focus on whole foods rather than meat substitutes.

Sobs noodles (or supernoodles if you Have them in the cupboard).

Fry loads of veg in garlic, add veg stock, sesame oil, soy sauce, curry powder, anything else yummy, a bit of plant milk.

Add the noodles. Make sure water is topped up so it’s brothy.

A quick and easy ramen 👍🏻
