Please could you suggest fillings for sandwiches, cakes etc for a vegan afternoon tea.

cucumber
salad
houmous
mushroom pate
sage and onion stuffing cooked in a loaf tin and sliced thinly once cold, with cranberry sauce...you don't even miss the turkey!)
marmite, avocado and spinach.

Seitan is delicious and goes with so much!
Cucumber, vegan butter (Naturli is amazing, actually tastes like butter rather than margarine), and dill.
Roasted butternut squash, red chilli and vegan creme fraiche (Oatly is delicious).
Onion bhaji and mango chutney.

I use the egg replacement for baking cakes.

Filo pastry is often vegan

Mini fruit crumbles. Some ready packs of crumble are vegan.

Tescos mini frozen churros with choc sauce in the middle are vegan and would look nice plated up

Beetroot humus and vegan cheese sandwiches, roasted aubergine spread sandwiches, cucumber and mint sandwiches.

Carrot sticks, green or red pepper sticks, endive leaves to dunk in broad bean or fresh pea puree.

Tomatoes stuffed with a filling of vegan cheese and chopped spring onions.

Make plain scones with trex instead of butter, and you can whip coconut cream for a filling.

Meringues made with chickpea water are actually surprisingly tasty!

Almost all of the Betty Crocker cake mixes are vegan and for most, you just have to add vegetable oil, water and 3 eggs (just use vegan substitute). Most of the BC icings are vegan too, including myvegansupermarket.co.uk/product/betty-crocker-chocolate-fudge-icing/ and myvegansupermarket.co.uk/product/betty-crocker-vanilla-buttercream-style-icing/
