Vegan Victoria Sponge

We have friends coming over tonight and, unexpectedly, a friend who is vegan has said she can come last minute. I was planning to make a Victoria sponge and would still like to. Does anyone have a good recipe for a vegan Victoria sponge?

Use pure margarine and vegan egg replacement, plus a little extra baking powder. Extra vanilla (or other flavour) to hide the artificial ingredients (they don't have a nice butter taste!). Use pure marg, icing sugar and vanilla to make a cream substitute or creamed coconut and lime zest/juice makes an interesting alternative (and put desiccated coconut and lime zest in the sponge instead of vanilla)

Google Tesco vegan Victoria sponge. Hands down the best vegan vanilla sponge recipe I've used. But make sure you use at least 2 tins as it won't cook properly if you put it in one tin. Recipe can also be used for cupcakes.

What is it in that recipe that makes the cake rise?

Bicarb and SR flour. Just don't be tempted to put in any more bicarb than the recipe says!

Do they mean the whole cake? Not per slice, surely?

How's it going @NearlyVegan?

Mine has just come out of the oven. It looks quite dark and doesn't smell very sweet. I hope it will be ok.

IamRubbish I think that is the cost of buying all the ingredients (ie the whole packet of flour, even if you only use half of it). It also says serves 4, but the portions will be huge if you do that!

Snap on it being a tad dark (golden syrup maybe?) but it is quite sweet was glad of the fresh strawberries to cut through it. It's a good sponge though and really moist. My wee boys are loving it. @Nemesia @hungryfortheinvisible
