In a rut and end of the budget - what are you all doing this week?

I'm not going vegan till Lent but I have this on my list:

I'm getting another box from them which has several veganisable recipes including a sausage casserole that looks good. I have a voucher if you want for a £1 box.
I also quite often give the DCs pasta pesto with peas or spinach (frozen is good).

Last night we had roast potatoes cooked in coconut oil with veg, stuffing, roasted carrots and Brussel sprouts and other veg with veggie sausages and gravy.

We are also having veg pasta bake this week, shepherds pie in the slow cooker made with lentils, peppers stuffed with risotto and sauteed potatoes and grilled asparagus. For Saturday I will do Fry's veggie burgers with gerkins, salad, vegan mayo and sauce with veg loaded onto skewers and marinated and grilled.

  • Veggie fried rice with those pre-marinated tofu pieces in it.
  • Slow cooker sausage casserole with new pots/cougette/aubergine/carrot in a tomato sauce + dumplings on top
  • Soya mince spag bol (use the dried one, the frozen is gross imo)
  • 'Vegeree' from HFW latest veggie cookbook (delish!)


Tonight we are having mushroom burgers (big baked mushrooms in a bun) with onion rings, chips and salad.

I’m veggie, trying to be more vegan. I had satay egg noodles the other night- thin slivrers of carrot, courgette, cabbage, red pepper and spring onion, stir fried with some noodles and all mixed up with some homemade satay sauce (peanut butter, sweet chilli sauce, lime juice, coconut milk, coriander). It was delicious, i’ll be having it again.

I'm just doing my meal plan for next week. So far I've got -
Vegan shepherds pie made with brown lentils and sweet potato.
Lentil Dahl
Veggie chillie
Veggie sausages with roast veg and rice

Do you use Pinterest? I get most of my recipes from there.

This has been an emotionally testing week for a number of reasons.

This week's meals have been

  • red lentil spag bol
  • takeaway, wine, wine, wine and wine
  • Fry's sausage casserole and mash
  • "buddha bowl" with fake chicken strips (homemade), greens, squash and chickpeas (2 nights running)

Pesto (made with peas too) whole rice risotto , if you cook a good amount of rice when you have the time you can freeze it for the week.

It's great with mushrooms too. We had mushroom soup last night.

Ooh and I often wash a pumpkin, make some holes in it, brush it with oil and stick it the oven , with a couple of onions, sweet potatoes or whatever and garlic cloves, unpeeled. You can leave them for an hour or so at 160C. If you want to make soup or stew take them out before they're too soft. If you just want a 'roast' leave till a knife goes into the pumpkin easily. It's great cut into slices and fried the next day with vegan burgers or fried tofu etc.

Just discovered DS likes mushrooms YAY!!!!

DD remains a fussy fucker but made a lasagne last week with red lentil Bolognese and cauliflower white sauce when went down well so I’ll be doing that again this week!

Hmm... we are actually a largely pescatarian household but we have three vegan meals this week, which isn’t unusual. A green lentil shepherds pie with sweet potato mash (BBC good food recipe, just leave the cheese off the top!), a sweet potato, chickpea and lentil curry with coconut milk and a vegetable stir fry with sweet chill sauce, crushed peanuts and rice noodles.
We also do a fair amount of bean chilli, quinoa chill, lentil or quorn bolognaise, vegetable pasta bake, Dahl and other vegan curries.

I made porridge with a tablespoon cocoa powder, agave syrup, pea protein powder (unflavoured) some spirulina and some dried sour cherries. 1/2 soya milk 1/2 water.

It was (surprisingly) lush and I feel the need to tell others! I haven't been able to stand spirulina in anything until now.

Yesterday- leftover 1 pot bean chilli for lunch

Mushroom and (alcohol free) ale stroganoff over bulgar for dinner.

Banana and chocolate loaf, marmite rice cakes and fruit for snacks. It was a hungry day.

Talking about porridge,I've discovered a way to make it lovely, (I was very meh about it before). I use the large oats and SOAK them in filtered water for 5 to 10 mins before cooking gently (in the same water) and whisking most of the time. It really improves the flavour and the texture I have molasses with mine, could add some cocoa and almond milk afterwards danger Grin

Had our Iranian stew just now which was LUSH with paratha (I use frozen ones from Morrison's).

First proper vegan day today, quite a bit too much carbs/too few proteins but I also have a stonking headache due to having had my morning coffee around lunchtime so needed carbs.

Butter bean stew with Brown rice and peashoot salad.

Sweet potato mash with rice and sauteed spinach with pinenuts and cashews with a lemon dressing.

Potato, tomato and red onion bake with baked beans.

TVP spaghetti bolognese tonight plus rice pudding to use up the accidental unsweetened almond milk.
DH is complaining that the sauce tastes nice. Actually I think the DCs and he like it more than I do.
