Best vegan dinners?

I'm not vegan but eat about 50%vegan.

What do mean by dinner? If you mean something you would serve to guests I'd suggest Asian cooking (veggie Indian made with oil and not butter).

If ideas for yourself well today for lunch I had puy lentils (braised with onion, garlic and parsley), potato salad (dressed with olive oil, lemon and chilli) with steamed asparagus.

Other day we made bean rissoles (type thing - made with left over mash), served with aubergine in tomato sauce.



More European is grilled courgette and aubergine antipasti with roasted peppers.

I'd like to eat more vegan so will be watching this thread, particularly for any bean/pulse recipes.

Whole rice (cooked properly not al dente!) with peas ,other veg that you like , pre cooked in a curry sauce or with peanut sauce, which is lovely. You can mix them with the rice or serve separately.

You can also marinade tofu in tamari (soya sauce), then fry it gently to serve with rice or noodles!

Mushroom pie (jus rol pastry)sweet potato mash, roasted veggies and gravy.

Linda McCartney 'pulled pork style' burgers with wedges and a big salad.

Bean chilli (butter and kidney beans, onions, tomatoes etc) with jacket spud and nachos

Chickpea and veg curry and rice with chapatti

Sweet potato stew

Buddha bowls

Look at bosh on Facebook for lots of yummy recipes and it's worth investing in a couple of good vegan cookery books we have discovered so many delicious dishes.

Yes also the book Veg Every Day by Hugh FW is a goodie for easy vegan meals.

For tea this week we have:

Veggie Bolognese/Lasagne with Sainsburys Garlic Baguette and Salad
Pesto Risotto topped with Cauldron Smoked Tofu
Arancini Balls with Smokey Tomato Sauce and Salad
Mac and Cheese with Peas and Brocolli
Crispy Kale with Fried Rice and Fry's Chicken Vegetable Katsu Curry (Mayflower)
Fry's Steak and Ale Pudding and Chippy Chips with Mushy Peas.
Giant Yorkshire Pudding with Sausage, Mash, Mixed Veg and Gravy

Going to see IT on Friday night with my friend so will be having the Chiquitos Garlic Bread and either Five Bean Chilli or Vegetable Fajitas. Both vegan as long as you don't have sour cream or cheese.

Peppers stuffed with quinoa cooked in bouillon, garlic, chilli flakes, courgettes, spring onions, mushrooms, aubergines and beans topped with pine nuts or breadcrumbs. Add some halved cherry toms if you like.

Mushroom pie can be very easy (esp. with a shepherds pie type topping instead of pastry) or complicated. I make it at Christmas sometimes.
