Cooking with nutritional yeast

Hi
My teenage son has recently become vegan and I'm trying out new recipes to feed him, trying to make sure he gets a varied/balanced diet.

I read somewhere that nutritional yeast is good for vegans so have bought some. I have sprinkled it over a stir fry after cooking and ds said it was tasty, so I'm now wondering about using it in cooking, but am worried that heating/cooking it might destroy the nutritional value. Does anyone know if the B vitamin in the yeast flakes is unaffected by heating? I'm planning on main some spicy bean burgers and thought I would throw a tablespoon of yeast flakes into the mixture.

Afaik it doesn't affect them to be cooked - I certainly do it all the time. Make sure you get the fortified stuff!

Thanks Oscha. It says it's fortified. I'll try it out in the beanburger mixture next time.

No, it looks like fish flakes but tastes sort of cheesy!

We add it to lots of things, either by mixing it into whatever we're making if it seems appropriate, or sprinkling it over the top - eg on soup or stew. I don't think cooking it will affect the vitamins, but maybe sprinkling it on food will help to make sure he's getting enough B12. Personally, I could eat it by the spoonful straight from the tub Smile

Fish flakes! I was trying to think what it reminded me of when I opened the tub.

I've mixed it in with hummus for his sarnies tomorrow. And will be making beanburger at the weekend to go in the freezer so will add it to the mixture.

Most of the vegan cookbooks I have say that heating nutritional yeast destroys the vitamins, so keep scattering it uncooked on his food just to be on the safe side!

That said, I cook it quite often - it gives a lovely nutty / cheesy / creamy flavour to soups and stews. I always sprinkle some on top too, straight from the tub :-)

Can you buy it from supermarkets or do you need a health food shop? I really want to pick some up

Holland & Barrett, Grape Tree both sell it by me, as does a small independent organic shop. I've never seen it in the big supermarkets, but we don't have a good selection of shops near us so maybe in a larger one?
