What did you have to eat today?

I've had:

Breakfast - nothing, because I had no time and wasn't organised
Lunch - risotto with mushrooms, spinach and asparagus
Supper will be - left over lentil bolognese

And some tea and more diet coke than is good for me

Porridge with blueberries for breakfast.

Delicious smoky black bean stew thing with wholegrain rice from Leon for lunch with a green shake.

Not got as far as thinking about dinner yet Grin

I am a bit obsessed with black beans at the moment! Biona do the most incredible tins of spicy ones.

Best heated quite vigorously until the liquid has turned thick and gloopy, then shovelled in to your mouth with a spoon straight from the saucepan.

Breakfast - Waitrose GF muesli with coconut milk and coconut dairy free yogurt.

Lunch - Deliciously Ella recipe - baked tomato chickpeas and avocado cream.

Dinner - Deliciously Ella recipe for Spaghetti Bolognese.

B buckwheat cakes with avocado and hummus
L turmeric carrot and coconut soup with toasted seeds and vegan parmesan
Snack nut and seed bar
S veggie curry with rice and green salad

spit can you post the baked tomato chickpea recipe?

I will have a look through my copy of her book. It's so easy to do, and really delicious. Will do it this morning Smile.

I have found so many of her recipes just work for me. And DH, who is still an occasional fish eater, enjoys them too.

Yesterday.toast and jam...bacon sandwich (obviously vegan) and 2 ice Lollys..today will ,I expect be the same..as my holland and Barrett dosnt order in enough bacon for my likeing..frustration dosnt come close

I have her original book, Deliciously Ella, and her second one DE Every Day. The recipe is on page 83 of Every Day.

You need 2 cans of chickpeas, 150g Sun dried tomatoes, half tsp chilli powder, 3 tbsps olive oil, 1 tbsp tomato puree, 1 tbsp Apple cider vinegar, salt and pepper.

Drain and rinse chickpeas and put in big bowl. Put rest of ingredients in food processor and blitz to smooth paste. Mix thoroughly with chickpeas and put on baking trays (spread out to one layer thick only). Bake at 160° fan/180° other ovens for 20-30 mins.

They are gorgeous. I serve them with avocado cream (my version of vegan mayonnaise) - blitz two avocados with juice of one lemon, add garlic, salt, pepper, chilli flakes or whatever else for favouring or leave it plain.

Smashed avocado with cumin salt on sourdough for breakfast here. A bit 'Shoreditch' I know but I'm addicted

I love avocado, but we rarely have it in the house, as no one else likes it. I don't know why that bothers me though, because I'll happily eat a whole one.

I always have avocado in. You can eat a whole one just on toast. Yum. In fact much better to live with avocado haters as more for you

Today has been porridge with coconut milk, milled linseeds and sesame seeds, desiccated coconut and banana. Then for lunch was a toasted granary bread sandwich with hummus, salad and a vegetable patty with more salad on the side and dinner will be pasta with oatly creme fraiche, vegan Italian style hard cheese, spinach and broccoli with linda McCartney sausages on the side for the kids and probably melon for pud.

Just about to have an early dinner. Steamed white asparagus wrapped in very thin omelette with chives, parma ham, topped with grated parmesan and grilled.

Vegan omelette, parma ham and parmesan?! I've never figured out a way to get that 'egginess'. Though I haven't tried black salt (is that what it's called?) and I think that's meant to help.

Muesli and almond milk for breakfast

Tempeh bacon sandwich with tomato chutney and vegenaise for lunch followed by a packet of om bar buttons.

Dinner will be a mushroom, spinach, carrot and tofu curry with rice.

Wine for fun.

I had oat griddlecakes from Thug Kitchen for breakfast (yummy), then a cobbled together couscous thing for lunch with a bit of marinated tofu, olives and sundried toms. Currently planning a homemade pizza with melty cheese, olives, sundried toms and chilies for dinner. Yummers.
