I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Not strictly vegan as I have added some quorn pieces but I've made a sweet potato and aubergine curry, with some Thai red paste and coconut milk. It's so nice. Waiting for DCs to come in so we can eat it. Having couscous with it as seem to have run out of rice.

Linda McCartney burgers with cheese, avocado, salad, homemade chips, carrot sticks, and load of hummus. I'm obsessed with these burgers at the moment - keep telling myself I'm being healthy, but my snug jeans are telling me otherwise...

Once we've cleared the cupboards out, we're moving to a more plant-based diet due to said snug jeans and a reliance on sugar to get me through the day. Any recommendations very much welcome!

I'm making sweet chilli stir fry noodles. I use seitan, Linda McCartney pulled chick'n, and some tofu for good measure. Easily 25 grams of protein in one meal. Had a vegan cheese and ham (chickpea flour) omelette and chips for lunch, and have just had cake and custard.

Bit baffled as to why veganism gets equated with deprivation, i must say.

Spaghetti sauce made with onion, garlic, red lentils, peppers, tomatoes and squash, herbs - blended. Served with spelt spaghetti.

Stir fried veg- mushrooms, baby corn, mange tout, peppers, courgette with noodles in a sweet chilli sauce.

Herby sausage (cauldron) casserole (leek, carrot, sweet potato, roasted red pepper and apple with veg stock pot, thyme and Rosemary) with boiled new potatoes.
It was fab.

Linda mac sausages in a veg curry, no rice.

Curry has cauliflower, courgette, spinach, cabbage, carrot, butternut squash, onion, pepper, mushrooms, butter beans, black eyed beans, berlotti (sp?) beans, chick peas, black beans, and red and brown lentils in.

It's delicious and must be full of enough good stuff to warrant the sausages as a treat Smile

Spinach, sweet potato and lentil dhal on BBC goodfood. We have it most weeks with homemade gluten free naan. Also on the website is Somerset stew which is rather nice just dont make the cheddar mash as its classed as veggie rather than vegan.

Not a vegan but tonight's offering is.
We're having roast parsnip and butternut squash in olive oil and chilli flakes. Barley risotto with porcini mushrooms and broccoli.
Basically, using stuff up Smile

My god these dinners sound delicious! Thanks so much for posting everyone - am going to take notes to help me get into a vegan cooking groove Grin DH and DCs are far from convinced but I will win them over one chickpea at a time!!

I'm not a vegan either cos I occasionally eat sustainable local fish but I otherwise don't do meat or dairy or eggs so we generally eat vegan

Last night we had spiralised sweet potato noodles sautéed with spinach, shallots, garlic and cumin and a vegan chocolate torte

Out for dinner tonight but tomorrow will be doing this which is a staple at ours:

Inspired by Simon Amstell programme to go vegan from veggie - at least when I'm cooking.
Tonight will be sesame/peanut aubergine curry from Madhur Jeffrey Easy Curry Vegetarian. Had before - utterly delicious - I'll just skip the Greek yoghurt I would have added before ...

How do you make barley risotto @bitchfromhell ? Is it the same method as rice risotto?

Those recipes sound good @ilovetocook - i've made daal before but not that flavour so i'll definitely try it!

Tonight I am making spinach falafels with grilled veg, hummus and tomato salsa. I have made them before too but would previously have served them with halloumi.

I am going to the library later so will see if I can pick up some Vegan cookbooks to browse.
