Anyone got any good suggestions on what to do with a 3 year old on the isle of wight?

There is loads!

Ventnor/Shanklin/Sandown/Freshwater beaches.
The Needles: At the top are amusements, you can walk or get a ski lift down to the beach and see the coloured sands and the Needles, you can get a boat to the Needles as well.
Ryde: Visit pier, walk along esplanade, play on beach (by the esplanade there is a small splash pool and park), walk to the end of beach and sort of behind the cafe is a nice park and area to explore (can't remember what it was called).
Ventnor Botanical Gardens: My kids loved exploring the gardens which are free and there is a play park there too.
We took our kids to Blackgang Chine and had a nice day out there. It isn't the most amazing attraction in the world but it is nice to walk around, the kids are sufficiently entertained, and it isn't hideously expensive and you can go back in 7 days of first visit.
St Catherines Lighthouse: Our kids liked visiting this, lovely views.
We also went to Atterton on a wet day and around the Maritime Museum.

There were loads of other things we could have done so have only touched upon what we did.
