London (SE) to Newquay - overnight stopover options

We will be driving from SE London to Newquay this summer and I am hoping to stopover for a night or two somewhere on the way down, both to break up the journey but also to extend our holiday.
Does anyone have any suggestions for a location or hotel around midway through the journey? I’m happy to splash a bit of cash as we haven’t been on holiday in over a year (like lots of people). It doesn’t need to be super child friendly but we will have two kids with us. A pool would be amazing and/or something to do on site, and I’d like a bit of boutique hotel luxury.
