Lurcher on enforced rest and going crazy

Dear Molly our lurcher has had loads of joint problems since we adopted her. She was a working dog and kept in a shed for the first 2 years of her life and we reckon she was either over exercised or under exercised as her muscles and joints are not what they should be.

We usually walk her 2X a day, 45-60 minster and this is fine for her. She lover to run off lead too, and we do let her nearly every day but these are the times that she seems to injure herself.

On Monday she was in a lot of pain following a longish off lead run on Sunday, so we took her to the vets. They couldn't find anything seriously wrong, they reckon it's just inflammation and a strained/pulled muscle, so recommended a week of reduced walks to rest- vet said 5-10 mind twice a day for 3 days then build it up from there. Molly is going mad today, she is so frustrated, pacing up and down, whining. I'm wondering whether to take her for a longer walk as she's so restless? I have been distracting her with toys and treats.

We'very also started her on u-move supplement as recommended by vet for her joints.
