I'm half way through the first episode and am loving it. But I feel like I might be missing references/connections to the first 2 series.

I haven't seen any references or connections to the first series yet beyond the following:

Snow
Police officer (not the same one or force... or even time).
Minnesota

There were some character overlaps between series 1 and 2 but they were about 30 years apart. The first series was set in 2006 and the second in the 1970s. In the second we see the female police officer from S1 as a child and her retired police officer father (who had a diner in the first series) was the central police character.

There is a mention of the Soux Falls Massacre in the first series and the second series is pretty much about that. And aliens but I never really got that bit! None of that family have turned up in series 3 yet.

Thanks very much for that Moving . I loved the slight cross over in series 1 and 2 so was worrying I'd missed something. I'm so happy it's back on!

I watched one and two and didn't even spot the connection! Watched the first one of 3 yesterday and seems good so far...didn't get how the first bit in German is going to connect to the rest though!

Ah, now I think one of those two German guys is Ennis Stussy who got killed but I may be wrong.

Fargo tends to threw a few curved balls that are are actually fairly obvious if you accept that everything you're watching is plausible, so it's probably something to do with the dodgy European enterprise represented by David Thewlis.
