Always a bit worried when an experienced chef has never had a particular food combination eg. steamed fish and apple puree. Makes me think there is a reason why this combination is not usual.

I'm always surprised that there's anything Marcus hasn't tried. I sort of assume these top chefs have cooked/eaten just about every combination going.
