And she said thank you at the time of receiving it, would you expect/hope for another acknowledgment later along the lines of "spent the money at a restaurant, was great, thanks again"?

Nope. DS has just been away I gave him £100 And he thanked me at the time. He has mentioned some things he bought whilst away but I wouldn’t expect another thank you.

I’m always a bit Hmm about people who need multiple thank you’s as it makes it seem that maybe they begrudge what they’ve given or want you to feel like you owe them something.

No - she thanked you when she got it.
Presumably she then added it to other holiday money she has from other sources and is thus wouldn't be able to say what your money actually went on.
