Do I need to buy a series 5 Apple Watch? I really want to get one but series 3 is half the price, is there a big difference?

My mobile provider is Sky, does this mean it's not worth me getting a cellular one? (Sky dont do SIM cards for it) how would a cellular one work if it's a different company to my mobile?
