At last! The avocado chocolate mousse pudding recipe (yes i know I'm in SN board!)

A few weeks ago someone (sorry, can't remember) was worried about lack of protein in the dc diet. I suggested avocados are full of protein and calories. So this recipe is lovely for that, and is nut free, dairy free, soya free...all good stuff!

It does work out expensive though, because of the avocados and maple syrup, bu a treat! Here goes:

Oh, by the way, it's American, so recipe is in "cups" but I bought some from the supermarket, so...

1/4 cup pitted dates, soaked for 1/2 hour
1/4 cup maple syrup or agave nectar
1/2 tsp vanilla extract (optional)
3/4 cup mashed ripe avocados (about 1 1/2 avocados)
1/4 cup plus 2 tbsp unsweetened cocoa or carob powder
1/4 cup water

Place the dates, maple syrup and vanilla in a food processor and process until smooth. Add the avocado and cocoa powder and process until creamy. Stop occasionally to scrape down the sides of the bowl with a rubber spatula. Add the water and process briefly. Store in sealed container in fridge. It keeps for three days in the fridge, or two weeks in the freezer.

If you want you can make a biscuit base and make it into a sort of cheesecake type of thing. And add sliced strawberries on top.

Voila!

Sounds lovely, Here is a recipe that was passed on to me the other day, might be useful for kids who are a bit reluctant to eat fruit - basically make jelly using fruit smoothie instead of water, it is very tasty and surprisingly posh tasting (watch out for smoothie with pineapple in, it will stop the jelly setting).

Mmmmm! I don't think the children would get near that recipe, it's all MINE!
