I have a sliver of toasted rye bread with a laughing cow light triangle (both are from the healthy extras allowance), marmite and two poached eggs. I don't like sweet stuff at breakfast time.

My staple is scrambled eggs and fried mushrooms. Quick and easy and filling.

How about a large mushroom, baked in the oven with tinned tomatoes and spinach and either cheese or an egg. Or both!

Eggy muffins (makes 6):

3 eggs
150g (ish) cottage cheese (I use the chive one)
Whatever "bits" you want to put in it (onion/mushroom/ham/peppers)
Halved cherry tomato

Fry off diced onion/mushroom/ham/peppers/whatever's lurking in the bottom of the fridge (just enough so it's softened and the water's come out of the mushroom)
Beat 3 eggs with 150g cottage cheese.
Combine the two.
Pour into a silicon muffin tin, or a normal muffin tin with paper cases (or one that's been frylighted to within an inch of its life).
Top with a halved cherry tomato (cut side up)

Bake for 20 - 30 minutes at 180c Fan/200c conventional/Gas Mark 6.

Can be eaten hot or cold (I put mine into separate little tupperwares old chinese containers and they last 3 - 4 days in the fridge)

Chop a mushroom and a slice of ham into a mug. Add an egg. Mix. Microwave for 90 secs.

Et voilà.

Go wild and have it with a small slice of Wholemeal toast.

Beans on toast or scrambled egg on toast are two of my staple breakfasts - I'm not that good at getting the 1/3 speed food at breakfast but it doesn't seem to matter as long as you do it for lunch and dinner
