Slimming world soups

Hi all, I've been with slimming world for a few months now but really going to get stuck into it properly this week! I'm hoping to make some soups to do me for lunches during the week- does anyone have any nice tried and tested recipes? Smile

I just had
2 sticks celery,
half a leek,
2 carrots,
1 onion
and 1 egg sized potato.
A garlic clove. All diced up
Cover with water add 2 chicken stock cubes and 100mils of milk
1 tablespoon of dried parsley.
1 tablespoon tomato puree
Bring to boil and simmer for approx 20mins.
Blend but leave a few chunks. Add pepper n salt to your taste.

It was yummy and filling with a wm roll.

Also use the basic above but add tinned tomatoesa bit of lean bacon and a handfull of pasta for a free minestrone.

For cauliflower soup use
1 onion
a whole cauliflower, green included or half bag frozen
2 laughing cow light
2 stock cubes.
Garlic

Cover with water,
Simmer and blitz up season with sal & pepper.

I have just made chicken and celeriac soup which should be free on SW.

DH makes a soup of diced carrots, celery, onion. Adds peas, stock and tiny star pasta. Is that all free?

Am starting SW on Wednesday. ??

Curried Sweet potato soup - Extra Easy plan

Makes 4 portions

1 x onion, diced
2 x gloves garlic, minced (or chopped)
1 tsp olive oil (2 syns - 0.5 syns per portion) or frylight
4 x sweet potatoes, peeled and chopped
Carribean curry powder (to taste)
1 x tomato, diced
1 x scotch bonnet
Couple of stalks of fresh thyme or a tsp dried
Vegetable stock

Fry the onions in the oil (or frylight if you want to make this a free food) over a gentle heat until softened, add garlic and curry powder, then the tomato and cook gently until tomato start breaking down a bit. Add the sweet potatoes and vegetable stock cube - cover with water and add the scotch bonnet chilli (Leave it whole) and the thyme. Bring to the boil, then leave to simmer for 30 minutes or until the potatoes are soft and breaking up a little bit. Allow to cool then blend.

It's a hot and spicy soup which is very filling.

Whoops! Forgot to say REMOVE THE SCITCH BONNET BEFORE BLENDING AND DISCARD.

The scotch bonnet blended would be massive. You might not eat for days after that.Grin

Butternut squash, red pepper, ground cumin & chicken stock.

Diced onion and garlic, small potato, bag of frozen peas and a ham hock in the slow cooker all day, when done take out the ham, blend the peas etc, tear the ham to chunks and put it back in.

1 can mixed bean salad
1 can green lentils
2 cans chopped tomatoes
...1 can baked beans
Handful of split lentils
2 large leeks
1 large onion
4 medium carrots
2 parsnips
Green, red & yellow pepper
2 beef or chicken or vegetable stock cubes
Salt pepper
Mixed herbs
Water (enough to cover all ingredients)
1.Chop and put all vegetables in pan
2.Add all other ingredients
3.Cover with water bring to boil and simmer until soft
4.Can be left chunky or blended (I like chunky better)
It also freezes - and it tastes great!
