yr9 DS has a half a term after the one & before the other. What curriculum will his teachers follow?

You need to ask the school, it will vary.

At my DCs school, they all 'go up' a year after the May half term. This includes starting the GCSE work if they are at that stage.

Mine doesn't have assessments as such. DD started GCSE science and maths at the beginning of Year 9. I think English, although not officially called GCSE heads the same way by the end of the year.

The other subjects seem just to carry on until July.

DS school also starts GCSE programme after May 1/2 term. But assessment week is the one commencing 31 March. So that's why I wondered what they teach during the half term in-between.

Ours carry on learning. They also have continuous assessments each half term as well as exams.

There is much more to being in school than just preparing for exams. It would be a sad world if we just learned what we needed for a test.

Do the teachers get to choose the remaining 6 weeks curriculum or is KS3 flexible enough that teachers always planned how and when to do it? Seems like they would have covered everything before the assessments, iyswim, but I don't know if KS3 exams & assessments work like that.
