Helping a friend here. He is a great teacher but struggling to show the 10 min measurable gain expected to be seen as much of the pupils work is slow and on going (sanding, deigning, making clocks etc). I can see that it must be much easier to show progression in 10 mins in other subject areas such as maths and english. Has anyone any useful comment?

Not sure what you mean by "10 minute measurable gain"

but

get the pupils to set themselves a target at the beginning of the 10 minutes, ask them at the end if they have acheived it and if no what will they be doing to to attain their target.

Not all work is practical- theory would lend itself to the 'ten minute gain' and practical work has to be done to different standards.
