Sometimes DH is a git but other times he's a saint for putting up with me and my occasional hormonal rage... Feel like I should do something nice for him more often.

Please don't suggest a BJ, it'd be highly unoriginal.

Make him his absolute favourite meal
Take him to see a film that he would like but you'd normally avoid
Write him a proper handwritten letter telling him how thankful you are and hide it in his jacket pocket to find unexpectedly

It depends on him. I've built a den for H before. He loved it (I am not on Big Bang). I also send him cards when he works away and do the sneaking notes/ snacks he loves in his pockets.
If he has a hobby? I've booked a bread making day and a cookery day for us both before as well as various driving experiences that fit with his interests.
Other things vary from the small (rearranging his books in order as he likes them a certain way but sometimes doesn't take the time) to the larger things such as getting a book signed by an author for him.

I once put motes on post it notes in olaces i knew my dh would go after work. Such as the kettle, coffee tub, toilet, wardrobe, tv remote...

I've occasionally bought mine flowers and he seemed quite touched. But mostly my gestures are food related.

Candles, wine and a duvet on the floor for a great body massage.
Foot massage and pedi - guys like the attention just as much. Just don't include nail polish!
Mix CD of fav tunes - anything that shows you put in some time and thought.

Hope this appeals to yr man. x

Ideally you use the air rifle after booze as you then have some empty can targets to take pot shots at! Proper redneck style.
