DH has just been told he is type 2 diabetic. I’ve been slowly building up an emergency supply of food but it’s very much based on being able to eat pasta and rice based dishes. We always eat wholegrain pasta and usually brown rice as well but even these have to be eaten in limited quantities now. Does anyone have any good shelf safe diabetic standby meal tips?
