Any recommendations for diabetic diet prepping?

DH has just been told he is type 2 diabetic. I’ve been slowly building up an emergency supply of food but it’s very much based on being able to eat pasta and rice based dishes. We always eat wholegrain pasta and usually brown rice as well but even these have to be eaten in limited quantities now. Does anyone have any good shelf safe diabetic standby meal tips?

You'll want high fat, high protein foods, things like tinned fish, beef jerky, cheese in wax, cured meats like chorizo.

Then veg which you can get tinned, pickled or freeze dried.

Carbs can and should still be eaten but think dark rye bread r ather than a white loaf and sweet potatoes instead of white potatoes.

Thanks Lwmommy. It seems so much harder to stock good supplies of the sorts of food he really needs to be eating. We’ve been told eggs are our friends but there’s only so long they’ll keep for. Likewise sweet potatoes.

At the risk of sounding really stupid, I keep seeing cheese in wax mentioned on prepped threads. Does the wax coating meant you can store them unrefridgerated?

What are you prepping for? If its food shortage rather than lack of power then you can freeze omelettes and mashed potato, or make egg muffins by putting veg and beaten egg in muffin cases, cookig for 20-30/minutes then cool and freeze.

There is also the good old powdered egg option but pretty sure it doesnt taste great.


You could store ingredients for.something like this easy enough www.sbs.com.au/food/recipes/rye-chapatis

wax covered cheese can be stored outside the fridge as long as its in a nice cool dark cupboard, bear in mind it gets more and more aged so if you left it for ages it would be much sharper than it started.
