Do you say Eck-onomics or eee-conomics for economics? I hear both. Is one correct or are both acceptable?

I never know. I say both, I think. Slight lean to eck- on the grounds that I don't say ee-conomist or ee-conomy.

Eck.

Imagine when abbreviating 'Home Economics', it would otherwise become 'Home Eek!' instead of 'Home Eck'.

Bit of both, mainly because I don't know which one is right!

Eck - largely because Terry Pratchett mentions it in one of his books, and since it doesn't translate well it comes out like Echo-Gnomics Grin
