Am having a Mexican fiesta to cheer up February-How do I make margaritas?? and in fact anyother recommended Tequila cocktails please

Will be wearing sombrero and bottles of tequila
Will be doing shots, but need some longer drinks? Any ideas
And yes, easiest and tastiest way to make margaritas in bulk

I've had good results with a simple margarita recipe that was two parts tequila, one part cointreau, and one part lime juice. Lime juice can be a bit tricky to find in the average supermarket but I've found it in health food shops.

If you want 'frozen' margaritas - ie, the ones that are like alcoholic slush puppies - then you'll need a blender to crunch up the ice. But I prefer them with just ice cubes and a bit of salt around the rim of the glass.

I think I had problems with lime juice before when making mojitos perhaps
I had to use lime juice cordial Blush

My Tesco has lime juice in the baking aisle.

You can use any orange spirit if you're not fussy- triple sec sometimes cheaper than cointreau.

Full-on margaritas can be pretty strong, frozen ones with crushed ice are good, or adding cranberry juice is nice too.

What will you be cooking?

Was planning on corn chips with things on a la Nigella
Cheese nachos
Some dips
Any suggestions on the food front?

Nigella's salsa dip in her new book is fab and very easy to make. It has red peppers and chilli rarther than tomatoes. if you need the recipe let me know.

What about daquiris? Strawberry or melon.

Just make it very clear to your guests what exactly the dress code is, so that they don't show up in a bikini and grass skirt to the February Hawiaan-themed party I was invited to, while everybody else sported a token hair flower. That Is All I'm Saying.

Quesadillas are yummy and easy to make. Put a soft tortilla in a dry frying pan and then spread some grated cheddar, mozzarella, salsa and guacamole on it followed by another tortilla. You can also add ham, chorizo, olives etc. Cook it until the tortilla is browned on the bottom then flip it over and cook the other side until that's browned and the cheese is nicely melted. Serve it sliced like a pizza.

Another thought - although they're more cuban than mexican, you could do mojitos. Rum, lime juice, mint leaves, sugar and sparkling water. Very nice.

I worked in a Tex Mex place for years! The margaritas were amazing!

Food - Fajitas, quesadillias, nachos, burittos, chips and Salsa, queso dip

Drinks - Margaritas, corona/sol. Not very Mexican but what about Strawberry daquri's?

I always use Cointreau and Grand Marnier in my Margarita's and you can normally buy the sweet and sour mix In the supermarket.
I used to mix warm water, lime cordial, lemon juice and sugar to make sweet and sour, might be a bit of a faff tho.

Haha yes definitely moustaches Grin
