I would probably just take tube to embankment tbh then walk. There isn't really a pretty walk option on that side of the river. Unless you cross over to south bank side and cross back. If with children it's also a fair walk if your going to be walking a lot once actually around Covent Garden area ( fairly big area if going down and up all the side roads)

I would just walk along embankment and then turn right by Temple tube. I think it's quite a pleasant walk on a nice day but long if you have young children

I think it's a nicer walk along the south bank esp. if you fancy stop off for a drink. Is slower and busier with more distractions but more interesting for a stroll. You can walk over Waterloo Bridge which brings you to bottom of Strand near Covent Garden

South Bank is much nicer than North for a stroll - a longer journey but better views and less winding around as you stay on the river the whole time. Cross over Waterloo bridge if you have time, Blackfriars and walk up Fleet St for a shorter journey. If you're going straight back to the hotel and want to treat yourself get the boat back from Embankment, or go old-school with the no 15 bus, one of the few remaining old Routemaster routes.
