I would try and make some easy things for you all that can be reheated later if eating seperatley
Tray bake - chicken pieces of some sort, new pot cut in half, veg roasted
Or we often use a grillin machine. So if you marinate some meat/ fish, you can just grill as needed for who and when, and add some veg/ salad. Kids here love chicken and mushroom piece on a skewer ( buy metal so reuse), and it takes 3-5 mins in grillin machine, which they have with corn on the cob, and whatever else in fridge. I marinate and add on skewers in am, then just leave marinating all day in fridge so is literally seconds in eve when busy.
Baked risotto. I'll never do the traditional one again! Takes 10mins to prep/cook then 25 in the oven. Look it up on bbcgoodfood for amazing recipe.
Also, sounds weird but annabel Karmel's spinach and bean pie - ds (20mo) loves it. Easy to make: make basic white sauce, stir in cheese of choice (Parmesan in recipe) and defrosted, cooked chopped spinach. Pour into oven proof dish, top with tin of beans (I use beans and saus) then mashed potato. Cook for 15 mins. Bit bland for me but anything ds will eat goes here!
Our most regular meals (we all eat together, two young children):
Roast chicken thighs - very easy, add whatever flavours you like - we do lemon, garlic, thyme. Can serve with eg rice and peas
Asian salmon in foil - really easy and quick, Google for a recipe. I make individual portions then can vary spicyness.
Sausages, salad, rice
Various pastas - Tuna pasta and amatriciana ( spicy bacon and tomato) go down well
Lemon chicken - cut up chicken breasts into strips, dip into seasoned flour, fry, add lots of lemon juice at the end
Chicken in pitta breads
Homemade pizza - or sometimes not homemade!
Dahl (although preschooler often refuses to eat)
I feel like we have quite a limited repertoire too, and very dependent on what preschooler will eat, but seeing it written down its not too bad. Hoping to pick up some ideas too
I am another batch cooker - I just cannot be doing with cooking fresh every day (I know, I am lazy... ). DH gets home late and I eat when he gets home (often something fairly ready meal like...)
I cook something for us, but in a large quantity and have enough left over for a few freezer portions for us and lots of individual portions for DS (3.25, but I have been doing this since before he was one - just used to purée things).
Things I batch cook:
- tomato and vegetable sauce (served with poached salmon or white fish - I buy fresh fillets, but in two and freeze as individual portions - or shredded roast chicken if I have leftovers)
- chilli beef (mild)
- chicken casserole
- beef pastitsada (http://www.waitrose.com/content/waitrose/en/home/recipes/recipe_directory/b/beef_pastitsada_with_allspice_and_red_wine.html - I slice up the onions).
- a spicy fruity pork casserole
- individual cottage pies
- individual fish pies
- sausage and lentil casserole
- mild chicken curry
- mild lamb tangine
So I have stocks of these in he freezer and then defrost and reheat thoroughly and serve with pasta/rice/potato (normally either a baked potato done in the microwave and crushed with some butter or sliced/crushed baby new potatoes) and fresh or frozen vegetables.
Then he may have fish fingers, oven chips, beans and peas once a week and sometimes a family meal together (ie roast dinner).
I may well change things when he does more preschool/school and I might have more time. However he will be having school dinners (which are excellent at his school) - so may not want/need two full meals every day...
Turkey meatballs. A pack of turkey mince, a slice of bread turned into breadcrumbs, a wedge of cheese grated and an egg. Mixed together, rolled into meatball sized balls and fried in a pan. Jar of dolmio type sauce, served with spaghetti. My 3dc and do love it. Really quick and simple meal.
I don't get to eat with my DS (10 months) sometimes depending on my shifts so I batch cook on a Sunday for him. This week he has got chicken and veg curry, moroccan lamb and Cous Cous, quorn bolognese with a hidden veg tomato sauce, fish pie and beef stew. The left overs go in a tub in the freezer for me or DH.
I do a lot of batch cooking for mine (3 and 11 months). I am constantly running out of ideas and recently bought the netmums recipe book.
Our favourites are:
bean chilli (onion, courgette, pepper, mushrooms tin of toms, tin of kidney beans, cumin and mild chilli powder)
roasted veg pasta source (roast butternut squash, courgette, toms, pepper, then blitz)
I just then take one out of the freezer last minute and defrost in the microwave.
I did Asian turkey burgers yesterday. Went down a treat and took 5-10 mins to prep n 5 mins on the George grill
Pack of turkey mince, 1 garlic, 2-3 spring onions, 1/2 tsp ginger, 1tbs lemon juice (I used jif) 2 tbsp soy and 1 egg white. Mush it into patties job done. U could get the kids makin it
DS is four and his favourite is mac cheese with cauliflower or broccoli in.
Cook pasta and veg in same pan and in separate pan make cheese sauce. Mix together.
One day I'll get organised and make batches of cheese sauce and freeze in small portions!
Yum, these all sound seriously good - and lots more adventurous than tea here....
My husband rarely gets home before 7, so the kids eat separately at 5pm. It seems crazy, but I literally treat it as a separate meal in the day and nothing to do with what dh and I eat. Sure I could do something about that, but have got into lazy habit of looking at the clock at ten to five, yelping with surprise, looking in the fridge, finding nothing, getting fishfingers out of the freezer, finding a tin of sweetcorn and bunging it on a plate for them.
Then later on, at about five to eight, I do the same thing with poor dh.
I think the answer is that really I need to get a bit more organised...

For quick things what about making some pizza dough in advance and involving them in making them up?
The most popular things in our house are variations on hot meat sandwiches
Chicken in ciabatta
Lamb kofta pittas etc
Then we have salady stuff and coleslaw/humours/cheese so everyone can add what they like
Make carrot ribbons with peeler. Cook with noodles. Drain most of the water and stir in a little stock powder. Add seafood sticks, sweetcorn and bite size cubed salmon. Stir over heat briefly then take off the hob and leave with lid on pan for a couple of min until the salmon is cooked. I am still working on exact timings, but that's the idea and it only takes 10 min.
Quick roast - 30 mins in oven (chicken thighs/drumsticks with new potatoes and veg and gravy)
Meatballs in tomatoe sauce
Jacket potatoes with tuna/salmon/beans/cheese/Bol sauce
Home made pizza - I have a load of home made bases in the freezer plus frozen home made tomatoe sauce. Chuck on sauce, toppings and cook for 15-20 mins
Mild chicken curry (onions, grated apple gently fried, add chicken, teaspoon of curry paste, brown, add tinned toms, chicken stock, coconut cream and veg. Simmer for 30 mins)
Lamb pitta burgers - lamb mince mixed with herbs and ground coriander seeds, fry. Into a pitta with mashed sweet potato, hummus, sliced avocado and cooked peppers etc
My poor kids are getting so bored of my cooking, but tbh, I really don't have time for anything more complicated at the moment.
I do a bolognese every week, so they get that a couple of times, then fishfingers, scrambled eggs, pasta pesto... umm....
