So...a birthday on monday. If I bake sponge cake tonight ( yes...I know it is half ten already...) will it still be nice on monday? (assuming I don't balls it up...which is a big assumption)
And could I ice it tonight too (butter icing)?

lol, I really really want to write a story about life on the shelf, the shelf life of a sponge cake.

Yes the cake will still be nice on monday it is less than 48 hours away and if you pop sake in a tin it will be fine - I actually prefere cake a little older/mature than really fresh the sponge has time to settle and moisten a little.

Sorry about the first bit it is my silly humor

It was so lonely since friendly crispy cake had run of into the rain with a lemon drizzle. Donught had been trying to cheer her up but then.....
