We're delighted that Ms Cupcake is joining us for a Q&A about vegan baking this week. If you're vegan, know someone with allergies to eggs or dairy or are just interested in vegan baking, post a question before midday on Wednesday 15th May and we'll post up the answers on Weds 22nd May.  Ms Cupcake has also kindly given us access to a couple of vegan cupcake recipes from her first book, Ms Cupcake: The Naughtiest Vegan Cakes in Town. Ms Cupcake is a glamorous, fifties-styled vegan baker who dreams of bringing decadent vegan baking to the masses. Originally hailing from Canada, Ms Cupcake moved to London in 1999. She began baking from home when she couldn't find indulgent bakery goods for vegans in London and soon realised that it wasn't just vegans that weren't being catered for, but also those allergic to different foods like eggs and milk. She launched London's first entirely vegan cake shop in Brixton in April 2011, which was recently shortlisted for Britain's Best Bakery on ITV. In her first sumptuous book, Ms Cupcake shares her secret recipes and enthusiasm for delicious vegan cakes and bakes.

How exciting. I've got her book on my amazon wishlist!

I'm allergic to egg and dairy so make vegan cakes at home and love seeing her creations on facebook. I'd like to know what kind of shortening she uses for her buttercream toppings and does it really make a difference as I've always thought it would taste odd.

I'm vegan and was missing doughnuts, then one day last year I bought a doughnut from Ms Cupcake's shop and it tasted so good I nearly cried. It's still a very fond memory, especially now I'm quite massively pregnant. I've seen vegan doughnut / yum yum recipes online but haven't dared try any yet, and the recipes seem to vary. Can Ms Cupcake share a recipe for a novice or offer tips? Bake them or fry them?

Oh how nice to have someone after my own dairy free and wheat free heart. Welcome Ms Cupcake Grin

My question is that I'm looking for a good moist recipe for an almond lemon cake and am having difficulty finding one without eggs (i could put egg whites in it I suppose but it would be nice to see if you've got an eggfree recipe ( I'm allergic to coconut oil and potato too !). Thankyou in advance.

Oh my those velvet cupcakes look yummy! My daughter is intolerant to dairy and allergic to soya, would there be any alternative to the milk and soya cream cheese for the cakes? She is 3 next week and would be nice for her finally to have a party where nothing is off limits to her. Am a bit scared of vegan baking so will keep an eye out for the book Smile

Hi Ms Cupcake! I'm really chuffed you are on Mumsnet, I used to live in Greenwich where you had a stall and got cakes from you for my dairy, egg and nut allergic dd - you made her very happy! It's great to see you making a success of your business Smile.
I'd like to know is there a way to make egg free marshmallow and meringue? I would love to have a go at making a dairy and egg free teacake (the ones with shortbread, marshmallow and covered in chocolate), and lemon meringue pie.

Hi Ms cupcake. I'm not vegan, but enjoy baking gluten free (by necessity) and vegan (because I like to share with allergic friends). I've been making nut butter cookies lately, and though they are gf/df easily, I'd appreciate suggestions for binding them without eggs.

Try following Chocolate covered Katies blog - she always has a gf option in her recipes, and the ones I have made are really nice. The pumpkin chocolate cake was amazing

Yy to vegan meringue. I've seen a recipe on the side of egg replacer, but never tried.

Leafing through the book now - it arrived today and the recipes are fab. Loads of gluten/soya free alternatives too.

Meringue recipe on the packet of Orgran egg replacer is a massive hit with DD1 - pipes and holds shape well. I reckon Orgran meringue and Ms Cupcake's Lemon Curd Slice recipe might come close to lemon meringue pie?

Hi Ms Cupcake. I am going to attempt the blueberry almond muffins, they look divine! The only cake I have ever perfected is a chocolate vinegar cake so it will make a change to try something different.

Can I ask if you are vegan for dietary or moral reasons?

I would love to win a copy of your book!

Biscuit What do you use for food colouring? I'd love to hear any recipes if you make your own (beetroot etc), or which brands you recommend if ready-bought. I'd love to create things like this: pinterest.com/pin/124130533452298174/, lovely bright colours.
Any other links to cake decorating supplies? Thanks!

We're not vegan but my twins are allergic to milk and egg, so I'm always looking for baking recipes.
The red velvet cupcakes look great and the cream cheese icing sounds scrummy too!

I had pre-ordered your book and it arrived last week.
Yesterday my son and I baked vanilla cupcakes with strawberry icing, and today we made chocolate-coconut ones. They were/are delicious!Grin

Do you have plans to open shops elsewhere in the country?

My sister in law is vegan and I'd love to bake her something that I can take when I go to see her, but I'd need to be able to make it a couple if days in advance and it would need to travel well (flight to France!). She also follows a very low fat diet, so ideally oil free too - do you have any suggestions or any recipes that would fit the bill??

ohfor lots of doughnuts have egg or whey powder in, you can find a few around without but they can often be few and far between.

Yes, I'm hoping for Brighton too!

In the meantime hysterical have you tried the cupcakes by Operation Icing? I think they are sold in Waikikamookau, I really like them and all the profits go to animal charities.

Actually I do have a question, any tips for a dense vegan fruit cake suitable as a wedding cake and able to stand up to being dowelled and tiered? Thank you.
