A couple of weeks ago Knorr challenged 30 Mumsnetters to take part in the Stock Pot Leftover Challenge and test Knorr products with their leftovers. This thread is for the 30 testers to share their feedback on the challenge, and for non-testers to share their experiences with Knorr & leftovers.

Here?s what Knorr have to say, ?As part of our partnership with Love Food Hate Waste, we?re committed to helping people get the most from their food, reducing the amount that goes to waste and saving them money at the same time. Christmas dinner is almost guaranteed to leave us all with lots of leftovers in the fridge, so we?re really excited to see how Mumsnetters use Knorr to give their Christmas leftovers a new lease of life.?

Non-testers: How are you using your Christmas leftovers this year? Are you churning out the good old turkey sandwiches or have you been more inventive? Have you used Stock Pots or Gravy Pots before when preparing meals with your leftovers? Whatever you?re doing with your leftovers, let us know!

Every year I plan to make get the stock started with the carcass as soon as lunch is finished.....every year I fail.

So if nothing changes this year, I will be using stock cubes/powder as a base for a zingy ginger/coriander/chilli/lime turkey noodle soup for after our Boxing Day family walk.

I'll also cook through some finely chopped green beans, mushrooms and onions in stock, add flour to thicken, then mix in shredded turkey and turn into a series of turkey pies with store-bought puff pastry. These freeze brilliantly when the pastry is still raw, and cook through in about 20 mins for a fantastic warming mid-week dinner.

Leftover veg will get the bubble-and-squeak treatment: mashed into patties and fried, then served with a quick salsa.

Any leftover xmas pud gets mixed up with whipped eggs etc into a sort-of parfait (no stock required).

I love doing stuff with leftovers Grin

I don't know what to call what I often make with a roast leftover. It's a bit like Bubble and Squeak.
I also use nice bits of meat for a help yourself table - with bread rolls, salad etc.
With other big bird roasts I'll make stock.
I have never tried a Knorr stock pot. But Dh has bought some so we may try one for soup in the new year. I hope it's as nice as M and S chicken stock concentrate.

Ham and turkey parcels - fry onion and mushrooms in BUTTER. Add a little flour to thicken, and then make a sauce with stock. Add chopped up left over turkey and ham. Put one spoonful on a square of puff pastry, and fold into a triangle, 180 for 30 mins.

Or stir fry, egg fried rice, cold meat and jackets.

I've made stock with turkey biones most recent yars as have had kids too young for the salt in shop stock. Won't ben doing it this year. Handy hint if you make your own stock. When drwining the bomes, its the liquid you want - don't pour it down the sink, and leave yourself with a sieve full of bones.

Non tester : I don't cook Christmas dinner myself, I go to my Mums but I do get a parcel of leftover turkey and normally use it in a curry. Then if that doesn't use it all I do a turkey and leek risotto with the rest.

When doing my own roast I always make stock and freeze it in a silicon muffin tray so I have my own "stock pots". I have used the Knorr ones on occasion though. I normally use stock in soups, risotto and stews.

I am making a batch of toddler meals with my leftovers. They will be frozen for using up whenever I am making something for DH and I which isn't toddler friendly. I bought lots of vegetables on purpose so I can also make a vegetable strudel which is my current favourite meal.

Tester here - we've already used one of the pots and were impressed. I make cider and onion gravy and mixing one of the veg pots in made it really rich.

I'll feedback more when we're tackling the leftovers :)

Stock for the carcass right away for risotto and soups. Turkey curry. Bubble and squeak. Bread pudding. Anything and everything eaten up. And turkey sandwiches too!

I've just made a delicious chicken noodle soup in an attempt to rid myself of the cold I've been harbouring for 4 weeks.
I used the carcass of a roast chicken to make stock (simmered it with carrots, celery and onions, salt and pepper, then separated the carcass from the veg, strained the stock, chopped up the veg and added the remains of the chicken meat (which I'd previously stripped and reserved). I added more water, discovered I'd watered it down too much, and so I used a Knorr chicken stock pot and a Knorr veggie stock pot to add more flavour. Some crunched up tagliatelli and another 20 minute's simmering, and it's ready to roll Grin

Non tester. I finally used the beef stock pots that have been in my cupboard all year.. I made a beef casserole with red wine, onion, celery which was lovely (if I do say so myself!). I prefer the stock pots to dry stock cubes and will be looking for inspiration to use the rest of the pack Smile

I will prob do the same old stuff with my turkey leftovers as I don't have much spare time for cooking this year. So it'll be cold turkey slices with everything, sandwiches, and I'll freeze the rest!

Non-tester.

We have three different meats at Christmas - turkey, ham and spiced beef, plus 2 stuffings (one vegetarian, one not), sausages, roast potatoes, a vegetarian option and at least 4 vegetables.
We will have reheated leftovers, meat sandwiches, and probably soup. My DH and DBro will snack on leftover meat just as it is very happily for several days.

I've never used a stockpot to use up leftovers, because DH is generally more than happy to reheat the same meal again or make leftover sandwiches.

Dear Knorr. Please use less salt. Then I will buy a low-salt Stock Pot, use it, and then tell you how I used it.

Tester here
Already used a chicken gravy pot .
Made sausage and mash ( a normal midweek dinner ) and used the chicken gravy pot to make an onion and mushroom sauce .
I just sautéed the onions and mushrooms in a spot of butter , added the gravy and some hot water .
DH walked in and said Oooh dinner smells nice !

Non tester- we will be eating our meat cold the next day with pickles, cheeses etc.
any veg will be bubble & squeak or go to the dog!

Non tester here... we will finish the veg off today with a bubble and squeak brunch. Then we will have turkey curry for tea. Spare cold meats after that will be divided up with our guests as they leave tonight. No use for stock pots here but who knows what our guests will do with their take- away beef, ham and turkey!

Non tester

Cold cuts of beef & ham with pickles and cheeses this evening.

Turkey carcass in slow cooker with carrot/onion/celery/bay leaf/peppercorns to make stock.

Just made the base of a pie-Sautéed leftover streaky bacon (from yesterday's pigs in blankets-more blankets than pigs so couple of rashers left), added sliced leeks & thyme, then thickened with some flour before adding water. Haven't added leftover turkey or ham yet as waiting for it to cool (it's for the freezer-I'll stir in leftover cooked meat and cover and freeze, then when at supermarket will buy puff pastry).

Will make cheese & broccoli soup with either Stilton or cheddar leftovers

Rice pudding & bread and butter pudding with the leftover cream

I finished the 'leftover' chocolates yesterday!

We aren't using any gravy pots for the leftovers but we did use one for the Christmas Dinner; my husband really likes using them.

Leftovers today are: turkey sandwiches for lunch and supper will be nut roast and sprout mash.

Tomorrow morning any leftovers will become bubble and squeak.

We had salmon for our christmas roast. It made delicious salmon sandwiches last night. The rest of the leftovers are with my mum though, so no adventures for us.

Non-tester...

We've whittled down the turkey crown to a container-full of 'left-overs' which will be made into a tasty turkey pie ;-).

If there's any more left over I shall be making one of Nigella's pan-Asian turkey salad classics which is cleansing and as different from Christmas lunch as you can get still using turkey!
