Struggling with dry food

Hi,
I am looking to start a low carb diet and currently eat a very heavy carb diet and am trying to do lots of research before starting to improve my chances of success.
I just don’t like the idea of meat /fish and veg without a sauce it just sounds very dry.
Are there any sauces that can be eaten on a low carb diet everything I’ve seen is really high in carbs, any suggestions on how to overcome the idea of dry food or something I can add would be great.

You can make sauces from soft cheese, cheese, cream, spinach, tomatoes, all sorts.

I love (veggie) courgette carbonara. Sauce is made of egg, splash of double cream and handful of hard cheese stirred through steamed courgetti.

I’m allergic to tomatoes but would make cauliflower cheese by adding grated strong cheddar to creme fraiche. Pesto is great on cod. Salsa verde. Even garlic and chilli in melted butter makes a sauce.

Blue cheese with cream is nice, so is keto Hollandaise sauce. Lots of recipes on line.
You could always have Mayo or olive oil over your veg.

Can’t you still eat soups, stews, curries, chilli etc on a low carb diet and just skip the bread/rice/potato bit?

This is what I would do.

Plenty of sauces! Apart from the fact that you can add butter to your veg, which adds moisture, you can still make tomato sauce or cream-based sauces - or roast a piece of meat/chicken and the juices from the roast.
