I'm trying my best to follow low carb but miss desserts. I have had berries and cream which is yummy but would like to expand this. But googling seems to get lots of recipes using sweeteners which I don't want to use. I'm trying to avoid sugar unless it's naturally present in fruit or vegetables. So I also don't want to use recipes that use it even in tiny amounts.

Can anyone recommend a Web site or recipe book?

This recipe can be doctored with a teaspoon of instant coffee, or with some sugar-free maple or butterscotch syrup. (I prefer stevia-based.). If you find this too rich, you can do half cream and half almond milk, which makes it more silky and more like a traditional pannacotta. Just make sure it's unsweetened.
I don't usually use the pomegranate seeds, as I find it gives me a niggly tum. (Nuts and seeds aren't my friend, damn it!).
