Belly pork

I'm having slow roasted belly pork tonight and can't think what to have with it. Any ideas? I don't like cabbage or very dark green veg and don't fancy just plain steamed veg. Was thinking maybe cauliflower cheese but can't remember how to do it. I've been off the wagon for a bit and need my tummy bloat to go before holiday in a couple of weeks Blush

I'm such a pain in the arse I really don't like swede turnip or celeriac! I could just have the green beans and have them buttered though

Boil cauliflower. Drain. Grate cheese. Cover in cheese. Stick under grill/in oven until melted.

Butternut squash is nice mashed. Or you could do roasted tomatoes, corgette, onion etc.

If you're dieting just have it with loads of salad type veg. That's what I do when I'm trying to reduce my calories as the meat will take quite a substantial portion of my daily calorie allowance. I might also microwave some asparagus to mix into the salad.

I like it with sweet potato mash. Steam equal amounts sweet potato and carrot, mash with s&p, and for an extra tasty version fry it in coconut oil or lard so it's crispy. Smile

Cauli cheese is easy.

Steam cauliflower

Melt butter, add plain flour and stir until it makes a dough ball. Add milk bit by bit until it becomes a smooth sauce then add a shitload of cheese.

Pour over cauli cheese and bake. Amazing.

I make a really easy cheese sauce, with cream cheese, double cheese and a ton of cheese in a saucepan - melts and comes together really easily.

Bit of mustard powder in at the start, and a splash of lemon juice or white wine vinegar at the end is also lovely.

Also, boil the cauliflower, drain (and squeeze out excess water) then stick back in the pan with a knob of butter, salt and pepper, then go at it with a stick blender - turn the heat back on and add a splash of cream (or Greek yoghurt) and a ton of cheese for a cheesy cauliflower mash.

Cauliflower cheese:

  1. Cut cauliflower into florets and boil in lightly salted water till it's tender - about 8-10 minutes; drain and let it steam dry in a colander/sieve


  1. Grate around half a small block of mature cheddar (you could do more if you like a really cheesy sauce - it's up to you and your taste how much you use)


  1. Bring 300ml double cream gently to the boil in a small saucepan; add the grated cheese and stir till it's melted in


  1. season with grated black pepper and a generous squeeze of lemon juice


  1. Pour over the cauliflower in an oven dish, and put in a hot oven/under a hot grill till it's piping hot all the way through and starting to brown on the top. (If you like you can put extra grated cheese on the top before you grill it)
