Your best low carb(but with protein) salads for the summer?protein

Starting back at low carb after a bit of a break and gaining a stone.

I've just had a lovely salad of leaves with roasted peppers & tomatoes and some spicy king prawns. Delicious and filling.

I need more inspiration to keep this up, please!

DH made me a lovely cobb salad the other day with chicken and black beans. It also had sweet corn, vine tomatoes and romaine lettuce. I think the dressing was bbq and honey - just a drizzle! It was really lovely and the beans and chicken up the protein quotient.

Baby spinach leaves (uncooked) then cook asparagus and mangetout or sugar snap peas in butter with a little salt. Mix into the uncooked baby spinach leaves and have as a side to meat. I also add halloumi to the pan when cooking the asparagus sometimes.

Today I had chicken thighs coated in fajita spices, guacamole, cheese and salad leaves with sour cream as a dressing. Was delicious

(Quackaday, beans and sweet corn are very carby. )

OP - Thai noodle salad. Make courgetti or strips of courgette with a veg peeler, add romaine lettuce, cooked chicken and radishes. If you have bean sprouts they are great too. Then dress with a light olive oil seasoned with fish sauce and a few drops of soy sauce. Serve with plenty of chopped fresh coriander and a couple of chopped salted almonds (or peanuts if you don't mind a few extra carbs). If you like it spicy you could add some chilli.
