Low-carb diets

Help for a vegetarian novice

I'm low carbing, have been at it for about a week now I fell off the wagon on day two though

I'm a vegetarian, which makes it quite hard as most low carb meals seem to include
Baked/boiled/grilled salmon/chicken etc.
I do eat eggs but I'm not really big on them, so I don't eat them often but I'm willing to eat more!
Any ideas?
Yesterday I had
Roasted veg (about 2-3G of sliced pumpkin, a large mushroom, a courgette, a tomato, red onion, broccoli, sliced bell pepper. garlic, 1 carrot sliced apple on top for sweetness. All sliced thinly and some grated) with about a tablespoon (dry weight) couscous mixed throughout.

Today I'm having a veg and egg stir fry with some dried rice noodles (not much, about 2 tablespoons cooked weight).

I NEED ideas!filling and tasty ideas! Please?!
Can get quorn and frys meat replacements - I do like some of these

The next meal idea (for tomorrow)
I have is a part boiled sweet potato with a little bit of cheese baked (I part boil any oven cooked sweet potatoes as they are very hard) possibly with some veg?
Other than that I am utterly out of ideas. Willing to go shopping

Your diet doesn't sound very low carb to be honest. Apples, noodles, sweet potatoes, couscous are all pretty high carb.

Full fat greek yogurt, avocados, butter fried tofu, egg mayo, oils, cheeses etc are all good. You need to avoid processed foods like meat replacements, especially when you are starting out. Have you had a look at the boot camp threads? A wealth of info and advice on low carb vegetarian if you look for it. Smile

That's not a low carb diet!

I eat fried mushrooms and eggs for breakfast, lunch is cheese/egg/avocado salad with olives, or sometimes a protein roll (lidl) with cheese and salad, dinners things like courgetti carbonara, cauliflower casserole, mashed swede, omelette, etc
For low carb you need to add lots of extra fat and salt and drink loads of water. You should avoid veg with more than 5g carbs per 100g, no fruit other than a few berries, definitely no cous cous or noodles!
