I've discovered celeriac gratin...so sooooo so good 😋
Has anyone discovered anything surprising they didn't know they could have on low carb?

Porridge....made with quinoa!

Cauliflower rice. Have it with everything now! Also, coconut milk!

Does it taste anything like porridge monkey?

Tub of full fat cream, whipped, then a teaspoon of hot chocolate powder mixed in! Mmmmm

Although if Biwi comes she will tell me off for using the powder but it's a great alternative to going off the rails and grabbing a mars bar

Is quinoa low carb?

Is quinoa low carb?

No, not at all.

I'm in love with coconut yogurt and pancakes with coconut cream instead of cream cheese (1 egg, 30g coconut cream).

Swede chips and crispy kale 'twiglets'.

Didn't think it was!

On the subject of kale crisps, don't buy the ready made ones. I saw some in asda that had 32.8g of carbs per 100 g hmm and another brand was 37.1g.

Kale chips are so expensive

Celeriac rostis are lovely!

Quite likely, a whole tub of double cream?

Kale chips are so expensive

Not homemade. wink
A bag of fresh kale is ~£1. Coat the sliced kale in a fat of choice, salt & pepper and into the oven for a few minutes (toss them now and again). For a twiglets taste add a sprinkle of yeast for bread.
You can also use savoy cabbage, cavolo nero, greens o even culiflower leaves instead of kale. Brussel sprouts cut in half or quarters come out lovely with this method, too. And the stems of cauliflower or broccoli thin sliced, turn into crisps in the oven.
You can create all sorts of flavours by adding spices. smile
