Try frying off onion, spices, maybe a bit of leek and chopped courgette and carrots (pre cook a little if needed) garlic ginger etc, maybe a little tom purée then when it's all soft blend it up to make a thick sauce / paste. Then coat with whatever you want. Thin it out with water or cream it up with cream or yoghurt. When not lo carbing I chuck in a hand ful of res lentils instead of veg which gives the sauce a lovely texture but don't see why veg wouldn't work. Can look up my spice combo if you need it.
