I'm going back on the veggie low carb bandwagon after putting back on 8-10lbs in the last few months, following an injury. I lost 30lb+ last year (post-natally) but could do with getting rid of this sneaky half stone.

I need some more recipe inspiration so please share!

I'm a veggie low carber.

Low carb pizza (make the base with 2 eggs and a tub of cream cheese)
And cheese and spinach soufflé are my current faves.

Making 'rice' from grated cauliflower is good too, with a nice chilli.
Aubergine parmigiana is another good one.
And using Aubergine slices as 'cannelloni', rolled up with spinach and ricotta.

I haven't got on well with cauliflower rice, but I like to use kale instead of rice! The other suggestions sound lovely Grin

AKiss - I didn't know that :) The things you learn!

It will be lovely to have some other veggie low carbers to talk to!! I don't eat eggs either - so an added challenge!

Tonight I had a small aubergine (which I salted and left on papertowel all afternoon) & a courgette coated in olive oil put on a baking tray alongside a red pepper cut in half & filled with pesto, finely chopped mushroom, garlic, halved cherry tomatoes & a small amount of cheddar cheese - all shoved in a hot oven for about 45 minutes. Very very good. I had it with some cold basil (taifun) tofu & some almonds after.

Sounds amazing chipping!

It would be hard without eggs, amazed that you're coping. I'm not a huge fan (don't feel like they are very veggie) but I like the variety...

I'm going to spend tomorrow making some recipes for the week. Nut granola for me this week!

Egg and cheese omelette for breakfast - it begins!

I weighed myself this morning and it was a bit of a shock -137.8lbs Hmm

I'm aiming for 125-127lbs so I need to get cracking. I've been on crutches recently due to a mysterious foot injury, but I've had the all clear for stress fracture so i can start training again, just cycling to begin with.

Ghost nut granola - what are you putting in there that's low carb?

Molly - I was vegan for 3 years, but found it almost impossible when I was travelling, so started eating cheese again and the other bits have crept back in, but I can't do eggs.

I'm having avocado, black pepper and Food Doctor savory seeds for breakfast :)

Ghost that's the kind of shock I'd like - I am a LONG way of getting down to 137lbs!

I'm 5ft and my goal weight is around 125lbs... as I say, it's a fair way in the distance!

I'm not doing it to lose weight anymore. I've lost the weight I wanted to. I'm doing it now because I feel so much better - not bloated, blood sugars feel more stable and I swear my PMS symptoms are better.

Well done akiss! I was in that place at the end of last year - life without the bloat was amazing. I have struggled with injury and going back to work and have gained 10lbs.

chipping I've been there at a much higher weight and know what it's like! I saw 125lbs once late last year and was starting to look a bit gaunt in the face by then, but it's a reasonable target BMI and size wise.

Try to get hold of Celia brooks brown veggie low carber book, it's really good, interesting food. I found Rose Elliot's attempt very poor and lacking in imagination. These falafels are very tasty and very tasty.

Try using portobello mushrooms as a pizza base. Madhur Jaffrey's aubergine curry - instead of faffing around with ricing the cauliflower, you could roast the florets - they work really well with curry.

Marking place. I think low carb is the way I need to go but I thought I couldn't do it being veggie.

You can do it perplexed! And so many of we veggies overcompensate with carbs. I lost about 35lbs last year!

Nut granola is a Rose Elliot recipe - walnuts, almonds, sunflower seeds, Brazil nuts, all chopped and roasted with stevia. Delicious with a bit of yoghurt :)

I'm going to take a look at that falafel and celia Brian's books - I have the Rose Elliot one which is a good intro but some of the food is a bit bizarre!

Frittata's are good too - especially for using up bottom of the fridge veg. I roast the veg first before mixing it with egg and cheese - feta, goats, haloumi, pine nuts, thyme/sage or rosemary works too. Make up a huge one or individuals for breakfast/lunch options.

Crackers: 2 cups ground almonds, 1 egg and season with a pinch of salt, pinch of rosemary and a pinch of garlic granules to taste. Roll between two sheets of baking parchment as thin as you can - 1-2mm. Score with knife into cracker sized pieces. Bake 180 for 10 mins, remove outer crackers which bake quicker, pop back into the oven for 2-3mins and again remove outer crackers, repeat till done.

They sound amazing. You're making me hungry! And I just finished divine cauliflower bake. Which was indeed divine. I'm at 12g of carb for the day; shame I've got about 9-10 hours of being awake left!

No I don't go through the parchment - a pizza wheel lightly applied or a Mezzaluna. Rock a knife along gently pressing rather than sawing - hope that makes sense.

Hello tentative newbie on a fact finding mission here! Hope you don't mind me popping in.

I stopped eating meat and fish at the end of last year, and have found it quite easy. My weight is stubborn at 77 kilos, right at the top of the ok bmi range. I swapped to wholemeal and brown rice and have noticed an improvement in bloating, but I think low carb is next step.

I've seen references to biwi's boot camp, but am a bit baffled by all the threads. Can anyone link to the basics so I can do some back reading? Thanks.
