I've just been having a read of the diet doctor website, there are a few pancake recipes on there. I'm going to try the coconut ones!

Does oat bran count? Some nice ones done with oat bran yoghurt and an egg. Flavour with whatever you like....mixed spice, cinnamon etc...

Not really proper pancakes but I do the cream cheese ones. 2oz of cream cheese and 2 eggs and a bit of salt. Yummy
